Egg Muffins Recipe


Lately I've been trying to come up with ideas on how to make our morning routine quicker and easier. By the time we get up Shawn doesn't have a ton of time to make coffee or eat breakfast. The routine we have usually starts with me making coffee, while he showers and gets ready. By the time I've made the coffee (we hand grind the beans and use a Chemex which takes longer) I always forget about making breakfast or run out of time. We usually like to make scrambled eggs or omelettes, but even those extra few minutes we don't have time to spare. I was on my absolute favourite website the other day...Pinterest and saw this great egg muffin or breakfast muffin recipe.

The recipe is so simple and I knew Shawn and myself would love these little muffins. I just prep them at the beginning of the week and then we have a week of breakfast. I just wrap them with saran wrap or put into a zip-loc container into the refrigerator. Heat a couple in the microwave each morning and add a little bit of ketchup.

As I mentioned above, the recipe is so simple.
 I whisk together about 8-9 eggs in a bowl. I add a little bit of milk or almond milk. 
I cook an entire bag of bacon, or you can just buy bacon bites to save you time. Once the bacon is cool I chop it up into little pieces. 
Before adding anything into the muffin pan, make sure you grease or spray with non-stick vegetable oil. 
Evenly pour eggs into muffin cups. Throw in a couple pieces of bacon in each cup and top off with some cheese. It's so simple.


Preheat the oven to 375F. Bake the egg muffins for about 18-20 minutes. They will puff up in the oven, but will settle down a little, once out of the oven and cooled off. Make sure to wrap them and throw them in the refrigerator and they should last you the week.


We only added eggs, bacon and cheese, but you can honestly add your own ingredients. I know some people add chopped up vegetables or even hash browns as a base.


 It feels so good to wake up in the morning knowing your breakfast is already finished!!
